We're starting the our latest challenge this month and time is winding down! The Challenge begins Monday, March 28th but you need to have your application in by March 21st. We are doing something a little different this time. We will be featuring a 21 Day Challenge. This is an excellent time to start eating healthy, getting in shape and getting ready for Summer! It takes three weeks to get into a habit and his will be a great beginning on your fitness journey. If you have more weight to lose than what you lose in the 21 Day Challenge, just keep up with what you were doing for the 21 days. We will be including a 21 day challenge each month. You will meet new friends and there will be prizes!
In our Cowgirl Fit Challenges, we team you up with a partner to help each other in this challenge. You can come in with a friend or we will select your teammate. In our challenges, it's a great way to not only get fit, but to make new friends!

Superbowl Recipes (Light)
Are you looking forward to the big Superbowl game, but don't want to blow your diet? Here are some of our favorite recipes. The dip has minimal fat and low calories. The chips have no oil, so you are eating very low fat, low calorie chips. Enjoy...
Low Fat Layer Taco Dip
1 Can fat free refried beans
1 Can black beans
8 oz. fat free sour cream
Salsa
Low Fat cheddar or mozzarella cheese
Chopped tomatoes and onions
In a shallow bowl or pan layer and spread refried beans, then black beans, sour cream, top with cheddar cheese, tomatoes and onions. Refrigerate for at least 2 hours before serving.
Light Tortilla Chips
Round Corn Tortillas
Pinch of Salt
Cut round tortillas into 8 triangles each. Place them on a cookie sheet sprinkling lightly with salt. Bake at 350 for 15 minutes.
Pumpkin Chocolate Chip Bread with Protein Powder

Yogurt Ranch Dip
Yogurt Ranch Dip is low in fat and low in calories and very tasty! A great addition to any snack!
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 3/4 teaspoon salt
- 2 large eggs
- 1 scoop vanilla protein powder
- 1/2 cup packed light or dark brown sugar
- 1 and 1/2 cups pumpkin puree (canned or fresh)
- 1/2 cup melted coconut oil
- 2/3 cup (120g) semi-sweet chocolate chips
In a large bowl, whisk the flour, baking soda, cinnamon, and salt together until combined. In a medium bowl, whisk the eggs, protein powder, and brown sugar together until combined. Whisk in the pumpkin, and oil. Pour these wet ingredients into the dry ingredients and gently mix together using a rubber spatula or a wooden spoon. There will be a few lumps. Gently fold in the chocolate chips.- Pour in bread pan and cook at 350 60-65 minutes.

You should have received an email with our newsletter in it that talked about our Cowgirl Fit Resource Book. It is a great little guide that you can put together yourself that includes, meal ideas, journal entry space and other information. You can view the instructions on how to put your book together here. You can easily print, then cut the pages out and then bind them together with staples, paper clips, or we went to the print shop and spiral bound it for only a couple of dollars. It's a convenient book to take along with you in your handbag.

Don't forget to drink your water each day! It is an essential part of losing weight. You should be drinking half of your weight in ounces. So if you weigh 150 pounds, you should be drinking 75 ounces of water. It can be hard getting that much water in, but make sure you are drinking at least 8 glasses of water per day. We will be talking about ideas for making your water intake a little easier in the upcoming weeks.
Keep on working hard! It will be worth it!
